Readings... Stuck with some Metric?

I found.. Settings / General Tab / Convert kilometers to Miles. That converted a few things but not everything. Temp, pressure, power and a few other things are still in metric units..

I take it that's the best I can do?

MES has only ever converted km to miles as this is the only EU/UK/USA/World value that varies (as far as vehicle systems are concerned). Vehicle parameters such as pressure (BAR), temperature (deg.C), angle (degrees) etc. all follow industry standard METRIC measurement values.
