Are you sure that uconnect have carplay?? same 7 inch versions dont have that function

you can try with another configuration software.. MES doesn't have the possibility to do this, other than manually changing the proxy bits, but I don't know what they are..

GPS is only for synchronizing the time, and for Compass data (show N/S/O/E... on display) eMMC 1Gb contain operating system, and and Nand MT29F8G all the other data (NAV, CAR menu..) I have no idea which bytes to change.. With MES it is relatively simple.. There are all configuration options available

i think no one will ever tell you the meaning of single bytes. it is information that is carefully kept secret...

you have to add some bytes in proxi. you can find the bytes to add with google. MES does not yet have an automatic procedure for doing this
